The masters, just like artists, all share the desire to achieve excellence in each piece and are obsessive over details and passionate about creating unique products. Cinco Jotas creates true works of art.

Each and every piece made in centuries-old cellars in Jabugo is worked and selected individually to ensure that it meets the Cinco Jotas maximum quality guarantee, which goes way beyond Black Label regulations.

MASTER SCULPTOR

The Master Sculptor shapes each piece with talent and devotion, preparing it for curing.

His dexterity means that he can carve the perfect outline to ensure that the ham matures correctly.

MASTER SALTER

Cinco Jotas 100% ibérico Acorn-fed hams are each buried by hand in sea salt from the Atlantic Ocean.

The exact amount of salt needed for each piece is the most closely-guarded secret of our master salter and its calculation requires an intuition built up over the years.

MASTER JAMONERO

Our master jamonero uses his experience and senses to care for and place each piece in our centuries-old cellars in Jabugo, where the temperature and humidity are essential to achieving the perfect balance.

In the Cinco Jotas cellars, it seems like time stands still.

THE CELLAR MASTER

"The nose"

Every Cinco Jotas product undergoes a demanding selection and control process to ensure that each and every piece offers a sublime taste experience.

After a process of constant care and monitoring, our cellar master makes four small incisions on each ham to check it is in the optimum condition. Here, his sense of smell is extremely important, allowing him to detect more than one hundred different aromas.

This is the only way to ensure that the ham leaves our cellars at the right moment to be enjoyed.

MASTER CARVER

The Master Carver's role is to carve each ham, with the greatest attention to detail, creating fine, almost translucent slices, and presenting them carefully on each plate as if it were a work of art.

The master carver ensures that the magic occurs, as the moment of carving is a true ritual: the culmination of a completely artisanal process in which every detail determines exceptional quality.

A flavour that illuminates the senses, raising them up to a level that few can reach.
