1 MASTER SCULPTOR
The Master Sculptor shapes each piece with talent and devotion, preparing it for curing.
His dexterity means that he can carve the perfect outline to ensure that the ham matures correctly.
2 MASTER SALTER
Cinco Jotas 100% ibérico Acorn-fed hams are each buried by hand in sea salt from the Atlantic Ocean.
The exact amount of salt needed for each piece is the most closely-guarded secret of our master salter and its calculation requires an intuition built up over the years.
3 MASTER JAMONERO
Our master jamonero uses his experience and senses to care for and place each piece in our centuries-old cellars in Jabugo, where the temperature and humidity are essential to achieving the perfect balance.
