In the heart of the Sierra de Aracena and Picos de Aroche, designated a Biosphere Reserve by UNESCO, Cinco Jotas has developed a controlled livestock farm, on a limited scale, which respects and protects the animal, its rearing and surroundings.
Its centuries-old dehesas offer a great variety of different varieties of oak - holm, cork, gall and pedunculate- all dripping with acorns, as well as aromatic herbs and other small fruits and nuts.
The acorns of the dehesa are one of the secrets behind the incredible flavour of Cinco Jotas.
During the Montanera, the mountain grazing period, ripe acorns fall on a bed of fresh grass. The pigs can cover up to 14 kilometres every day while grazing for acorns, ingesting huge quantities that are accumulated in unsaturated fats, creating the famous marbling seen in acorn-fed 100% ibérico ham.
The nutritional value of the acorns resides in their high oleic acid content, which adds to the flavour and texture of each ham, making our ham a recommended part of a healthy diet.
In addition, our free range 100% ibérico pigs also consume wild fruits, roots, mushrooms, grasses, herbs, small invertebrates, nuts.... Such a varied natural diet gives our products an unrivalled texture, flavour and aroma.

El proceso de cría es lento, como dicta la naturaleza. El cerdo 100% ibérico es una especie escasa y limitada por los recursos naturales: cada animal dispone de más de 2 hectáreas en la dehesa para asegurar su adecuada alimentación natural a base de bellotas.
