TASTING NOTE CINCO JOTAS IBERIAN HAM

APPEARANCE

Three tones, from deep red to pink. The marbled fat and the small crystals that result from the slow and gradual curing process visibly glisten.

AROMA

Long and intense, with notes of acorn, damp grass and thyme. Toasted, woody notes.

TEXTURE

The 'maza' (the widest part of the ham) is smooth, juicy and unctuous. The 'punta' (hip end) and 'jarrete'(between the tibia and fibula) have a more fibrous, firm and compact consistency.

FLAVOUR

The unique flavour of Cinco Jotas ham has hints of acorns, toasted hazelnuts, wet wood and wild flowers. Sweeter and fattier at the end. Umami.

In the heart of the Sierra de Aracena mountains, in Spain's dehesa, Cinco Jotas has developed a controlled livestock farm, on a limited scale, which respects and protects the animals, their rearing and surroundings.

Working in line with the natural cycles of the dehesa is vital to ensuring an exceptional product.

Always check the labelling of our products for guidance. To preserve the ham once you’ve started carving it, cover the cut surface with a slice of white fat from the ham followed by a cotton cloth. Ideally, slice the ham daily to keep the cut fresh. To ensure maximum quality, we recommend consuming a Cinco Jotas ham within 2 months and storing in a cool, dry place.

These are tyrosine crystals (amino acids) that form due to the slow and careful maturation process.

Approximately one-third of the total weight of a ham is made up of the bone, which can mean around 2-3 kilograms in a standard-sized jamón ibérico.

There is no significant difference in the quality of Jamón de Bellota 100% Ibérico based on the sex of the pig; factors like breed, diet, rearing, and the curing process are what truly influence the quality of the ham.
