Experts always say that the best way to preserve a Cinco Jotas ham is to consume it, but a medium-sized piece (between 6 and 8 kilograms) can last for about a month once opened. When the ham is opened, it is necessary to protect the exposed lean part from the air, as air removes moisture from the surface, diminishing its juiciness. Additionally, oxygen can oxidize the surface, altering the flavor of the first slices.
To protect the ham from the air, the best option is to cover it with thin slices of white fat or rub the surface with them once we"ve cut the amount we want to consume at that moment.
